Belgian Chocolate Truffle

Three layers of dark chocolate sponge, soaked lightly in sugar syrup and filled with Belgian chocolate ganache. The whole cake is coated in the same ganache, poured to a glossy drip down the sides, and finished with a ring of piped chocolate rosettes along the top edge. Rich rather than sweet, with the ganache doing most of the work.
